Genesis farm is the creation of Oscar and Olga Mendez who process their own coffee in their tiny microbeneficio they constructed in 2007. Genesis represents their environmental and ecological dream to sell their own coffee autonomously rather than anonymously into the local mill where its identity was lost. Oscar has a determination that is almost theological.

He has created a farm with lush shade trees and bright colour Bird-of-Paradise and hibiscus flowers established throughout. The coffee trees are randomly spaced throughout the farm amoungst the flowers, not in regimental rows normally seen in coffee plantations.

No pesticides or chemicals are used on this farm so it is effectively organic, but not certified.
We are very excited to have this microlot from Genesis because Oscar only produces a tiny crop all of which is prepared as honey (miel) coffee; like a pulp natural, where the coffee cherry is milled to remove the outer skin, but the parchment coffee retains the pulpy mucilage on the surface which is slowly dried in the sun. This exposed contact with the fruity mucilage creates enhanced sweetness, softened acidity richer body, and intensifies the flavour experience.
