Espresso is but one of several ways to brew your coffee. Home espresso machines work by forcing pressure through the coffee which must be finely ground to slow down the waters passage through the coffee. This helps extract the right balance of oils and flavour from the coffee. Too slow and the espresso will be bitter, too fast the espresso will be watery thin and lack the intensity it should have.
