This beautiful "natural" preparation offers an aroma that is highly fruited with sweet tropical notes. The acidity is complex; sweet red apple malic and lemon citric and the body is expansive, opening into deep fully matured flavours of red wine, toffee and haylage.
Natural Process
The traditional method to process coffee originated in Ethiopia. Picked coffee cherries are sun dried and then hulled. No water is used in this system so it is very eco-friendly. The ripe cherries are picked and spread out directly onto a raised African bed structure that permits air to circulate around the coffee, hastening even and thorough drying. Once dried the now blackened cherries are milled, sorted and graded.
From an environmental approach the honey and Natural process are considered the most ecologically sound method of post-harvest processing. There is no fermentation or washing step so utilizes minimal to nil water. And the natural sun drying on raised beds saves electricity and fossil fuels.
