Shoyue is a subgroup of the Sidamo Coffee Farmers Cooperative Union which is Fairtrade and Organic Certified. This washed Sidamo is floral, from start to finish. The fragrance from the dry grounds has layers of candy-like passion fruit and a citrusy quality to the wet grounds aroma. If you like dynamic bright flavour profiles, then this is it. The acidity is well-defined, with bergamot lemony brightness. The body is very light, refined and silky. There is black tea, pear and apricot flavours embedded in the complex of fruit notes, but the cup doesn't have the same sky scraping high notes as our Yirgacheffe, yet it’s a joy to cup this coffee.
