The natural sundrying imparts a distinctive complex fresh resonance of blackcurrent, black cherry and toffee sweetness. The finish is winy, like raisins and a walnut aftertaste. Wonderfully complex and vibrant.

Kebado is a very small town off the main road to Dilla in the Sidamo area. From this rural setting comes one of our most nuanced, exciting Ethiopia coffees. Sun dried means whole ripe coffee cherries are picked from the tree and laid out to dry on raised screens. This is an excellent method for dry-processing coffees as it prevents ferment that occurs if the fruit takes too long to dry. The raised bed allows convective air currents to dry the coffee from above and underneath. The skilled drying is really evident in the cup as well along with the fact that only red-ripe cherries were selected for the micro-lot. This was part of a programme called "Operation Cherry Red" designated to pay higher prices to the farm co-operatives for better-quality harvesting. This shows in the quality of the roast and the clean sweetness of the cup. Ripe fruit and rustic sweet syrup dominate the dry fragrance. There is ample blackcurrent and black cherry in the sweetness too. The cup has the same jammy flavours, blackcurrent, cherry and damson. It has a walnut roast tone behind the fruited notes.
