High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Fruit. Many coffees have fruity notes, not surprising considering that coffee beans are seeds of a fruit. Naturally processed coffees are often fruity as the method enables more of the sugars in the fruit are absorbed in the beans.
Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.

Processing Method
This coffee was processed using the natural method. Post-harvest processing influences the taste profile. Washed coffees are brighter, naturally processed are sweeter and honey processed are somewhere in between.

This coffee is sourced from the Bayter family, who began their agricultural journey at the El Vergel farm in 1995. After a sharp drop in the price of avocados in 2006, the Bayter’s mother, Martha, decided to diversify her crops and, in 2009, introduced the first coffee plants to El Vergel.

As the coffee market grew, so too did the Bayter’s interest in new and unique coffee varietals, pulping methods and fermentation techniques. In 2016 they began planting Geisha, Java, Pacamara and Laurina varietals; and in 2018, the farm was modernised to accommodate new experimental processing methods. The Bayters have since become pioneers of innovative new processing methods, carrying out exhaustive research on bacteria and yeasts to better control their coffee fermentation. Today, El Vergel has expanded to plant over twenty eight different coffee varietals, and are known for being the first coffee farm in Colombia to develop a koji fermentation processes.

This lot is a Red and Yellow Caturra varietal, naturally processed before being decaffeinated using naturally occurring ethyl acetate, sourced from Colombian sugarcane.
