This year’s London Coffee Festival (7th – 10th April) sees us celebrating Cascara, amongst other things. Cascara has been slowly gaining popularity over the last few years, but there’s a good chance you’ve not heard of it before. So here’s all you need to know.

What is Cascara?

Cascara is the dried husk of the coffee cherry. The pulped fruit is collected after the coffee beans have been removed from the cherries as part of coffee processing. It is then dried naturally on raised beds before milling to produce the cascara husk.

The Benefits of Cascara

Not only is coffee cherry tea delicious but it is also eco-friendly. Normally the pulped fruit is considered a by-product of the coffee-making process and is either discarded as waste or used as compost. Now these cherries are being reused to produce a unique drink of their own.

CASCARA COLD BREW

YOU WILL NEED
100g Cascara
1L Filtered Water


METHOD
1. Fill a jug with cascara and water.
2. Steep for 24 hrs in the fridge.
3. Strain and serve on ice.

COFFEE CHERRY TEA

YOU WILL NEED
15g Cascara
250ml Boiled Water
10 mins infusion time
96oC Water Temperature


METHOD
1. Brew cascara as per the ‘Cascara hot infusion’ recipe.
2. Add cognac.
3. Rub rim of glass with an orange zest and garnish.
4. Serve at temperature of brew or room temperature.
5. For something slightly sweeter add a dash of chocolate bitters.

FACT
Cascara is filled with a high concentration of natural sugars, oils, vitamins and antioxidants which come from the skin and pulp of the coffee fruit.

FANCY A COCKTAIL?

GIN FUSION
300ml CASCARA COLD INFUSION
250ml GIN
150ml PRESSED APPLE JUICE
100ml ELDERFLOWER CORDIAL
HANDFUL CLAPPED MINT
ICE

METHOD
1. Place all ingredients into a jug and stir.
2. Garnish with a sprig of mint.
