Graciano Cruz has created a farm at Los Lajones that has the perfect conditions to undertake research to investigate how to improve quality at the farm. Volcanic soils rich in minerals and organic material provide perfect conditions for cultivating coffee. The coffee is grown under full shade trees of inga, mandarin and lemon that provide a rich environment for wildlife. The cherries are dried naturally on raised beds before milling to produce the cascara husk. These perfect ripe cherries produce the delicious syrupy sweetness in the coffee cherry tea. Coffee cherry fruit is filled with a high concentration of natural sugars, oils, vitamins and antioxidants which come from the skin and pulp of the coffee fruit.

coffee cherry tea
An infusion prepared from the outer fruit of the coffee bean creates Coffee Cherry Tea. This dried fruit prepared at Los Lajones Estate from natural dried catuai coffee cherries is called Cáscara The flavours of the infusion are very different to  roasted coffee with flavour notes of cherry and dried cranberry.

How to infuse: 70g Cáscara / 1ltr ratio water (94C). Infuse for about 10-12 mins brew time. This extended brewing extracts the sweet syrupy flavour notes and yields a pale red brew.

*Please note this is not a coffee bean and is prepared using methods similar to loose leaf tea.

Los Lajones Estate, boquette, Panama

Graciano Cruz has created a farm at Los Lajones that is the perfect conditions to undertake research to investigate how to improve quality at the farm. As an experimental agronomist he can harness his training to produce exquisite coffee. The land was first planted with coffee trees in 1992, prior to this it was cattle pasture so the volcanic soil is enriched with nutrients supporting high quality organic production. The elevations define the farm as highland cloud forest and it is planted with primary oak woodland at greater than 60% of the land. Los Lajones has a strong biodiversity principle, focussing on botanics, birds, mushrooms and butterflies. During the season the farm is noted for the good labour standards provided for the Ngöbe-Buglé Indians workers coffee pickers who are indigenous to Panama. A high standard of accommodation is provided on the farm. From an environmental approach the honey and Natural process are considered the most ecologically sound method of post-harvest processing. There is no fermentation or washing step so utilizes minimal to nil water. And the natural sun drying on raised beds saves electricity and fossil fuels.

Convenient Delivery packaging

In an effort to reduce wasteful packaging and also make delivery more convenient for you. If your order is 2 x 200g bags of coffee or less your delivery will be sent in a box designed to fit through your letterbox. So you no longer need to wait in for your Union Coffee delivery.
N.B not all letterboxes are made equal. Our boxes are designed to meet the Royal Mail letterbox guidelines, sadly this doesn't cover all letterboxes. We've discovered that older houses can often have unusual dimensions and the box may not fit through.
