Campus #1, el salvador

Introducing the first in our series of very special, new and limited edition experimental roast coffees. This series is a one off and once it's gone, it's gone. Art by Ben Clark. Roast by Edita Chodarcevic.

The first coffee in the Campus Series is a natural lot from El Salvador. This coffee was produced by Leopoldo Muyshondt on his farm ‘El Ausol’ in the region of Juayua. Leopoldo is a fifth generation coffee farmer whom we’ve been working with since 2011. El Ausol is one of three farms owned by Leopoldo, and sits at the top of the mountains in Juayua with its sister farm, El Topacio. The processing of the coffee cherries happens at the third farm, El Diamante at the bottom of the mountains

Natural coffees are divisive and often said to be too intense and unusual. We chose Juayua for its complexity, coffee has notes of strawberry, tropical fruits and milk chocolate. Due to the creamy body and soft acidity, this versatile coffee will work both as an espresso and filter. Whilst roasting the coffee we wanted to highlight the acidity, which is complex due to chemistry happening when cherries are dried, we also wanted to maximise the sweetness to keep a perfect balance in the cup.

We roast this coffee in limited quantities once a week on Thursday, so your order may take longer to reach you than normal.

Orders placed before 12pm on Tuesday will be roasted and despatched on Thursday.

Any orders received after this time will be held until the following week. If you order other items, your order will be held and everything will be roasted and despatched on the same day.

The artwork was designed exclusively for us by london tattoo artist Ben Clark @benclarktattooer and celebrates El Salvador’s national treasures. Ben used inspiration from El Salvador’ss national bird, the turquoise browed motmot and the national flower, Flor de Izote.

You can also purchase our limited edition Campus #1 T-shirts with Ben Clark’s design, guaranteed to be collector’s editions. Coming soon

El Ausol, Sosonate, EL Salvador

El Ausol placed second in this 2017's Cup of Excellence. It is not the first-year Leopoldo Muyshondt has won awards in this competition, hosted to find the best coffees from El Salvador.

Union has been buying from Leopoldo since 2011. El Ausol is a medium sized farm with 24.5 hectares, and Leopoldo is a fifth-generation coffee producer. His son Sebastian (13 years) loves to accompany him to the farm. The family owns two sister farms, El Topacio and El Diamante. El Topacio and El Ausol, are located on the top of the mountains in Juayua and joined by a 12 hectare forest. El Diamante is at a lower elevation and near Juayua City, in El Diamante the administration, process and storage of the 3 farms takes place.

The name El Ausol, means ‘geyser’, the farm has several geysers.
