High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Chocolate & Caramel. Brought out by the roasting process – caramelisation happens towards the end of the roast. Generally the darker the roast, the more dominant the chocolate and caramel flavours are.
nuts & spice nuts & spice
High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Nuts & Spice which typically shows the aroma of sweet spices such as cloves, cinnamon and allspice. Flavours of toasted almonds and macadamia. And is often typical of Brazil coffees and the Bourbon variety.
Roast
This coffee is a dark roast. Roast level influences the flavour and body of coffee, and darker roasts are fuller bodied, with bold, rich chocolatey notes.

Best Brewed As

This coffee is best brewed as an espresso (coffee shop type machine or a bean to cup). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
Processing Method
This coffee was processed using the washed method. Post-harvest processing influences the taste profile. Washed coffees are brighter, naturally processed are sweeter and honey processed are somewhere in between.

More about this coffee

Foundation is a 'no holds barred' Arabica blend echoing the dark, sweet roasts of Southern Italy and Sicily. The body cuts well through also milky drinks. This espresso coffee is a blend of our Direct Trade Indonesia and Asia coffees with Latin American. Each piece of this dark roasted blend engages perfectly to create a balanced, heavy bodied coffee. As an espresso, taste cocoa and dark chocolate with a spicy, smoky finish. As a filter, enjoy notes of dark chocolate with brown Muscovado raw cane sugar.

Foundation

The coffees in this blend...

There are currently 3 producers that provide the coffees that make up our Foundation Blend.

First, we have coffee from the Esquipulas co-operative in Huehuetenango, Guatemala, which has conditions about as perfect as you can get for growing speciality coffee; a high altitude of over 1,500 MASL, fertile soil, and glorious sunshine. We’ve been working with the Esquipulas co-operative since 2009 and in that time they have grown, now working with more than 230 smallholder farmers.

Second, we have coffee from the Fero Co-operative in Ethiopia. They’re certified organic, using organic compost and no agrochemicals at all on the coffee. The co-operative is part of The Sidama Coffee Farmers Cooperative Union who helps to provide marketing, finance and technical services to 53 primary cooperative societies and over 80,000 farmers.

Third, we have coffee from Gajah Mountain on the island of Sumatra in Indonesia. The consistent weather conditions mean that Sumatra has almost a year-round harvest season, with fresh coffee available almost all year. We have been working in a specific micro-region Gajah Mountain and the farmers we work with are keen to let the world know they produce the best coffee.
