genesis, costa rica

This is a long time favourite of ours we look forward to welcoming back this year.

Best brewed as filter, it is sweet, juicy and balanced. It presents a delicate complexity with notes of red berries, raisin, cane sugar and a hint of melon on the finish. The aftertaste is very clean and reminiscent of brown sugar.

Oscar and Olga work very hard to create this magical place where speciality coffee is grown. The borders of the coffee fields are full of flowers, grown by Olga as well as medicinal herbs and a small Geisha tree. They work in harmony with natural in an environmentally friendly way. Their daughter Pilas helps them on the farm when not working as a teacher.

‘’Genesis’’ – beginning the transformation towards producing in harmony with nature and is fitting for this family farm. As they embarked on a new adventure of picking, processing and selling their coffee cherries direct to Union; whilst also growing wild flowers and medicinal herbs, they work hard to produce high quality, speciality coffee.

Genesis is the tiny farm created by Oscar and Olga Mendez. Their passion and extraordinary focus has enabled them to produce a truly outstanding microlot that we are privileged to be allowed roast. Our coffee was selected from a specific portion of the farm named Finca Pilar. Genesis represents their environmental and ecological dream to sell their own coffee autonomously rather than anonymously into the local mill where its identity was lost. Oscar has a determination that is almost theological.

Watch on YouTube: Oscar Mendez talks about his genesis microlot

He has created a farm with lush shade trees and bright colour Bird-of-Paradise and hibiscus flowers established throughout. The coffee trees are randomly spaced throughout the farm amoungst the flowers, not in regimental rows normally seen in coffee plantations.

Genesis tree planting

No pesticides or chemicals are used on this farm so it is effectively organic, but not certified.

We are very excited to have this microlot from Genesis because Oscar only produces a tiny crop all of which is prepared as honey (miel) coffee; like a pulp natural, where the coffee cherry is milled to remove the outer skin, but the parchment coffee retains the pulpy mucilage on the surface which is slowly dried in the sun. This exposed contact with the fruity mucilage creates enhanced sweetness, softened acidity richer body, and intensifies the flavour experience.
